Oven Baked Chicken Fajitas

I prefer to create my own fajita seasoning with: chili powder, cumin, paprika, coriander powder, garlic powder, salt, and pepper. If you do not have all of the ingredients it's okay, I'm a believer in improvising!

Oven Baked Chicken Fajitas

Ingredients
  • 2 chicken breast (around 2 lbs.)
  • 1 white onion (or more to taste)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper (I use the bag of assorted small peppers from costco) 
  • 2 cloves of minced garlic
  • 3 Tbsp olive oil
  • 1 lime
  • 3 Tbsp of cilantro (optional)
  • 6 tortillas for serving
Fajita Seasoning:
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp coriander
  • 1 tsp salt
  • 1/2 tsp pepper
Cilantro Lime Crema (Optional)
  • 1/2 cup sour creme
  • 1/2 lime
  • 1 tbsp cilantro
Directions:
  1. Preheat oven to 425 and defrost chicken if frozen ( I prefer water bath)
  2. Cover sheet pan in tin foil or spray with cooking spray
  3. Cut up onions and peppers and lay on a sheet pan. Slice the defrosted chicken into strips and mix chicken with onions and peppers. Pour olive oil over the sheet pan and cover the onions, peppers, and chicken entirely. Evenly cover with minced garlic. 
  4. In a separate bowl, mix together fajita seasoning. Sprinkle seasoning over fajitas and cover contents entirely. Space chicken out evenly to ensure it is cooked all the way through. Put sheet pan in the oven for 18-20 minutes. 
  5. While the fajitas bake, cook tortillas and make the cilantro lime crema if desired. Slice an avocado for topping (optional). 
  6. After 18-20 minutes, take the sheet pan out of the oven and drizzle lime juice over fajitas. Garnish with cilantro and a sprinkle of salt and pepper. Serve in warm tortillas with toppings of choice. Feeds 3-4.
